Korean Fried Chicken is easily the crispiest, crunchiest fried chicken out there and it's super easy to make at home. This same method can be applied to wings, cauliflower and fish and chips, basically anything you want to have a ridiculous crunch. For this recipe I opted not to include measurements by weight mostly because the batter doesn't need to be precise, I usually just eyeball it when I make it. This recipe is for 2 portions, so adjust accordingly if you want more.

Fried Chicken
4 Skin on bone in chicken thighs
1.5 Cups All purpose flour
1 Cup All purpose flour for dredging
1/2 Cup Corn starch for batter
1/2 Cup Corn starch for dredging
1/2 Cup Panko bread crumbs
1/4 tsp Baking powder
1 tsp Kosher Salt
1/4 Cup Soju (or plain vodka)
1-2 Cups Soda water (depending how thick the batter is)
Gochugaru Salt
2 tbsp Gochugaru (Korean chili flakes)
1 tbsp Sea Salt
Sauce
1/4 Cup Soy sauce
2 tbsp Japanese mirin
1/2 tsp Sesame oil
1 tsp Chinese fermented black rice vinegar (or malt vinegar)
1/4 Cup Korean rice syrup (or 1/8 cup golden corn syrup)
1 tbsp Gochujang (Korean chili paste, more if you like it spicy)
1 tbsp Brown sugar
3 Large Garlic cloves minced or crushed
Salt and freshly cracked black pepper to taste
