Ingredients:
80 ml rice
120 ml chicken stock
1/4 teaspoon soy sauce
1/2 teaspoon ketchup
pinch of pepper
1-2 pieces of leftover fried chicken (Churchs, KFC, etc.)
handful or two of sugar snap peas
Instructions
Prep!
1. Pour 80mL of rice into the large food compartment of the Itaki Pro and wash your rice three times. You’ll do this by adding a good amount of water, agitating the rice with your fingers, pouring the water out and repeating this process another two times.
2. Place a piece or two of leftover fried chicken on top of the rice. Take 1.5 times the amount of chicken stock as your amount of rice, so for 80 ml of rice, that’ll be 120 ml of liquid for us. You could use chicken stock instead of water but it won’t be as flavourful. Next, add 1/4 teaspoon of soy sauce, 1/2 teaspoon of ketchup and a pinch of pepper and give it a little stir.
3. Add some greens! We use sugar snap peas, but you can use other veggies if you want. We usually just take a handful or two of sugar snap peas and wash them. Place the washed sugar snap peas in the small food compartment and put the small food compartment on top of the large food compartment. Snap the food container lid closed. Put the lid on the Itaki Pro. Place everything in the fridge until you’re ready.
Time to cook! Rice and Chicken first!
4. About 45 minutes before lunch, take the Itaki Pro out of the fridge. Open up the lid and the food compartment lid. Take out the small food compartment and set this off to the side. Pour in 3 cups of water using the little cup that comes with the Itaki pro onto the heating plate. Put the lid back on, plug in the unit and press the button.
Add the veggies!
5. About 40 minutes in, carefully open the lid, place the small food compartment containing your veggies on top of the large food compartment and close the lid of the Itaki Pro again.
6. When the light turns off (approx 5 minutes), open up the lid again, remove the small food compartment. Shred the chicken with 2 forks. You can do this either in the food compartment, or in another bowl. If you shred the chicken inside the food compartment, just be careful, the food compartment does cool quickly, but to start, it’s really hot.
Enjoy! Once your chicken is shredded, stir your chicken into your rice and enjoy with the side of steam sugar snap peas.
