Ingredients

110 g unsalted butter (about 7½ Tbsp), softened
½ cup powdered sugar
1 egg yolk
1 tsp vanilla extract
A pinch of salt
1½ cups all-purpose flour

1 egg white
1 cup finely chopped hazelnuts

Filling
40 g milk chocolate (about 1.4 oz), melted


Instructions

1. In a mixing bowl, combine the egg yolk and ½ cup of powdered sugar. Beat with a mixer until smooth and creamy.

2. Add 110 grams of butter and the vanilla extract. Continue mixing until well combined.

3. Using a spatula, fold in the flour (1½ cups) and a pinch of salt.

4. Knead the dough until it becomes smooth and no longer sticks to your hands.

5. Wrap the dough in plastic wrap and chill in the refrigerator for 20 minutes.

6. After resting, take walnut-sized pieces of dough. Roll each piece into a ball, then press a small well into the center with your finger.

7. Brush the sides of the cookies with egg white, then dip the edges into the chopped hazelnuts.

8. Place the cookies on a baking sheet lined with parchment paper, leaving some space between them.

9. Bake in a preheated 350°F (non-convection) oven for about 20 minutes.

10. Once baked, fill the centers with melted chocolate (about 40 g of milk chocolate).
