✍️ 🧾 Ingredients
For the saag base
Fresh palak (spinach) – 3 cups (washed)
Fresh methi leaves – 1 cup (washed, chopped)
Green chilies – 1–2
Ginger – 1 inch piece
Garlic – 4–5 cloves

For the curry
Paneer – 200–250 g (cubed)
Onion – 1 large (thinly sliced)
Tomato – 1 medium (finely chopped or puréed)
Coconut milk – ¾ cup (thick preferred)
Oil – 2 tbsp
Butter – 1 tbsp (optional but recommended)
Cumin seeds – 1 tsp

Spices
Turmeric powder – ¼ tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Garam masala – ½ tsp
Black pepper powder – ¼ tsp
Salt – to taste

👩‍🍳 Step-by-Step Method
1️⃣ Prepare the Palak–Methi Paste
Boil water, add palak + methi, blanch for 2 minutes.
Immediately transfer to cold water (keeps color bright).
Grind with green chili, ginger & garlic into a smooth paste.
Keep aside.
👉Tip: Don’t overboil, or the saag will taste bitter.
2️⃣ Fry the Paneer
Heat 1 tbsp oil.
Lightly shallow-fry paneer cubes until golden.
Remove and soak in warm salted water (keeps paneer soft).
3️⃣ Make the Masala Base
Heat remaining oil + butter.
Add cumin seeds → let them crackle.
Add sliced onions → sauté until light golden.
Add tomatoes → cook till oil separates.
Add turmeric, coriander powder, cumin powder & salt.
4️⃣ Add Saag Paste
Add the prepared palak-methi paste.
Cook on low flame for 5–7 minutes, stirring.
Oil should slightly separate and color will deepen.
5️⃣ Add Coconut Milk & Paneer
Lower the flame.
Add coconut milk slowly and mix gently.
Add paneer cubes.
Simmer for 3–4 minutes only.

⚠️ Do not boil after adding coconut milk.
6️⃣ Final Touch
Add garam masala & black pepper.
Adjust salt.
Switch off flame.

🍽️ Serving Suggestions
Serve hot with naan, roti, paratha, or jeera rice
Garnish with coconut cream or butter for extra richness ✨
