✍️ 🧺 Ingredients
For Kachori Dough
Maida – 2 cups
Ghee or oil – 3 tbsp
Salt – ½ tsp
Ajwain – ½ tsp
Water – as needed (for stiff dough)
✍️ For Green Peas Filling
Fresh green peas – 1 cup (coarsely ground)
Oil – 2 tbsp
Jeera – 1 tsp
Saunf (fennel seeds) – 1 tsp
Green chilli – 1–2 (finely chopped)
Ginger – 1 tsp (grated)
Hing – a pinch
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Amchur (dry mango powder) – 1 tsp
Salt – to taste
Fresh coriander – 2 tbsp (chopped)
👩🍳 Method
1️⃣ Dough Preparation
1. In a bowl add maida, salt, ajwain, and ghee.
2. Rub between fingers till it looks crumbly (important for crispiness).
3. Add water little by little and make a tight/stiff dough.
4. Cover and rest for 20–25 minutes.
2️⃣ Green Peas Filling
1. Heat oil in a pan.
2. Add jeera, saunf, and hing – let them crackle.
3. Add ginger & green chilli, sauté lightly.
4. Add coarsely ground green peas.
5. Cook on medium flame, stirring continuously till moisture dries.
6. Add all spices, salt & mix well.
7. Cook till mixture becomes dry and slightly crumbly.
8. Add fresh coriander. Cool completely.
👉 Filling must be dry, otherwise kachori will break.
3️⃣ Shaping Kachori
1. Divide dough into small balls.
2. Roll slightly, place 1–1½ tbsp filling in center.
3. Seal edges carefully and flatten gently (do not make very thin).
4️⃣ Frying
1. Heat oil on low–medium flame.
2. Add kachoris in medium-hot oil.
3. Fry slowly, turning occasionally.
4. Cook till golden brown & puffed.
🔥 Slow frying = crispy kachori + fully cooked filling.

Dough must be tight, not soft
Filling must be completely dry
Oil should never be too hot
Fry patiently on low flame
