All chefs have a dish that teaches them something beyond just cooking. For me, that was the American Chinese classic orange chicken.
It started as a client request. I cooked it, but inside I had my own reaction and saw it as “inauthentic.” Seeing how much joy it brought him showed me how wrong I was, and it taught me a lot about humility, openness, and what comfort food really means.
This version keeps the soul of the dish, the crispy skin, sweet citrus, that familiar warmth. But I make it with care and real ingredients like fresh orange juice, ginger, and five-spice instead of syrup and shortcuts. A little comfort, a little nourishment, all in one plate.
