Stir-fried Tomatoes with Scrambled Eggs 番茄炒蛋 is an all-time household favourite dish in China. Its fresh, tangy flavour with subtle sweetness makes it a perfect and nutritious companion dish with your daily staple. It is super quick (less than 15 mins ) and easy to make!

🌶 Stir-fried Tomatoes with Scrambled Eggs Recipe:
🌶Spice Level: 0
*Ingredients*
• 400g medium-sized well-ripened tomatoes, roughly cut into chunks.
• 4 medium-sized eggs, lightly beaten
• 1 spring onion, finely chopped and separate into white and green parts
• 4 cloves of garlic, fined chopped
• 1 spring onion, finely chopped
• 1 tsp of sugar
• 1 tsp of salt
• 3 tbsp of cooking oil
• 1 tbsp of light soy sauce
*Method*
Preparation (5 mins):
1. Cut the tomatoes into medium-sized chunks.
2. Lightly beat the eggs into a smooth mixture.
3. Finely chop the spring onion.
Cooking (5 -6 mins):
1. Warm the wok first and then pour in 3 tbsp of cooking oil.
2. On high heat, pour in the egg mixture and stir-fry for around 30 seconds, until the egg mixture is just formed. Remove the fried egg from the wok and set aside.
3. Add in a bit extra oil (1 tsb) and toss in the white part of the spring onions, fry briefly on low heat to get the nice aroma.
4. On medium heat, put in the tomato pieces and cook for 2 -3 minutes until the tomatoes start to collapse in shape.
5. Return the fried eggs back into the work and mix it well with the tomato juice. Break down the eggs into small pieces.
6. Add 1 tsp of salt, 1 tsp of sugar, 1 tbsp of light soy sauce and mix well.
7. Transfer onto a plate and toss in the spring onions to finish.
