INGREDIENTS:
150 g 70% Cocoa Dark Chocolate, Chopped
1 tbsp Cocoa Powder, Plus Extra for Dusting
150 g Ground Almonds
110 g Unrefined Caster Sugar
90 g Unsalted Butter
1 tsp Vanilla Extract
1 tsp Almond Extract
3 Medium Free-Range Eggs, Separated
STEP 1: PREPARE
Preheat oven to 180 degrees and line a muffin tray with 12 fairy cases (slightly smaller than muffin cases).
STEP 2: COMBINE INITIAL INGREDIENTS
Set a pan of water to a gentle simmer and place a heatproof bowl on top with the chocolate and butter and leave to melt. In a bowl whisk together the sugar and egg yolks until pale.
STEP 3: COMBINE ALL INGREDIENTS
In a separate bowl whisk the egg whites until they form stiff peaks. Now combine the melted chocolate with the yolks and sugar followed by the baking powder, ground almonds and the two extracts. Then use a spatula to carefully fold in one third of the egg whites and continue until everything is mixed in. Do not over mix.
STEP 4: PREPARE TO BAKE
Spoon batter into cake cases leaving only a 1 cm gap from the top. Place muffins into the oven for about 10-11 minutes. They should be still quite gooey inside once inserted with a skewer. Leave to cool for ten minutes before cooling completely on a wire rack. Dust with coco powder and scatter almonds on top to finish.
