INGREDIENTS:
8 Chicken Thighs
4 Garlic Cloves, Diced
2 Banana Shallots, Thinly Sliced
90 g Pitted Black Olives
70 g Pitted Green Olives
3 Anchovies
1 Tin of Plum Tomatoes
1 Glass of Red Wine
150 ml Chicken Stock
1 Tin of Chickpeas
4 Leeks, Roughly Chopped
1 tsp Ground Cumin Powder
1 tsp Turmeric Powder
1 1/2 tsp Tomato Puree
1 tbsp Olive Oil Zest and Juice of a Lemon
Handful of Fresh Basil Leaves
Sea Salt and Black Pepper
STEP 1: PREPARE TO BAKE
Preheat the oven to 190 degrees and prepare a large baking tray. Add all the ingredients to the tray except the basil leaves and lemon placing into the oven to roast for about 1 hour.
STEP 2: BAKE
Half way through cooking, remove tray and mix everything around. If chicken thighs need more crisping up then leave under the grill for 5 minutes.
STEP 3: SERVE
Serve straight away with basil leaves scattered over and the zest and juice of the lemon.
