This cream of asparagus soup is non-dairy, healthy and tastes amazing. This easy recipe for Georgian Satatsuris Supi is made with asparagus, fresh herbs and eggs.
Rich in fiber, minerals, and vitamins, asparagus is the foundation for this beautiful green soup. The eggs, added at the last minute, provide thickness and creaminess, and vinegar adds a special tart kick to the soup. It is an excellent vegetable-based starter soup to any meal. Serve with sour cream on top, warm bread, and a salad.
This light soup is excellent for a romantic date, and it calls for a glass of light wine to go with it. Georgian white dry wines made in a European style—such as Tsinandali wine aged in oak barrels or Mtsvane—which is available at Eastern European wine stores or online will be an excellent accompaniment. If you have trouble finding Georgian wines, have a glass of Sauvignon Blanc.

Ingredients for Asparagus Soup
Serves 4 to 6
1.1 pound/500g asparagus, trimmed and cut into 1-inch pieces
6 cups/1.4L boiling water
4 tablespoons/60ml canola or olive oil
1 medium onion, peeled and finely chopped (1 cup/150g)
1 garlic clove, peeled and minced
1/2 cup/20g finely chopped flat-leaf parsley
1/2 cup/20g finely chopped cilantro
2 large eggs, at room temperature
1 ½ tablespoons white wine vinegar
kosher salt and freshly ground black pepper, to taste
