So to Celebrate my Milestone, I am making a Peachy Licious Peach Pound Cake! It is moist, full of Peach flavor, and topped with a Peach Soda Glaze!
A great Summer Treat to serve at your BBQ Cookouts, Family Reunions, and Fish Frys; you’ll be in Peach Heaven when you taste this Pound Cake!!

Dry Ingredients
3 cups self rising or all purpose flour
1/4 tsp baking soda
1/2 tsp salt (if using all purpose flour)
Wet Ingredients
1 cup (2 sticks) unsalted butter, softened
1/2 cup (1 stick) margarine, softened
3 cups white sugar
6 extra large or jumbo eggs, room temperature
1 tsp freshly squeezed lemon juice
1 tsp pure vanilla extract
1/2 tsp pure almond extract
1/2 tsp pure lemon extract
1 cup peach yogurt, room temperature
2 cups diced fresh peaches (about 2 large peaches, peeled and pitted)
Peach food coloring, optional
You can also use frozen peaches
Peach Soda Glaze
1 1/2 cups powdered sugar
1-3 tbsp peach soda
In a medium bowl, add flour, baking soda (and salt, if using); whisk or sift together until well incorporated, set aside.
Grease a 10 inch bundt pan with baking spray, set aside.
Preheat Oven to 325 Degrees
In a large bowl with hand mixer or stand mixer with paddle attachment, add butter, margarine, and sugar; cream on medium speed until fluffy. Next add eggs one at a time, beating after each egg (Scrape the bowl occasionally). Then add lemon juice, vanilla, almond, and lemon extract to the butter mixture and mix until well combined. Next add the peach yogurt alternately with the flour mixture into the butter mixture; beginning and ending with flour. Next add in the peaches and (food coloring, if using) mix until well incorporated. Using a spatula, give the batter a final stir to make sure the peaches are mixed evenly throughout the batter. Pour cake batter into the bundt pan, shake and bang the pan to get rid of the air bubbles. Bake for 1 hour, 20 minutes to 1 hour, 40 minutes or until toothpick in the center comes out clean. Remove from the oven and cool on a wire rack for 10-15 minutes then put the pound cake on a cake stand and cool completely. Drizzle with peach soda glaze and the glaze harden and set, serve and enjoy!
Peach Soda Glaze
In a small bowl, add powdered sugar and peach soda; stir until well incorporated. If it’s too thick, add more peach soda, if too thin, add more powdered sugar.
