Welcome back. I hope you enjoyed this what I eat in a day video, in which I share easy, healthy and delicious meals to provide plenty of energy and support a healthy weight as well as healthy, glowing skin.
I eat a plant-based/vegan diet, but if that is not for you, you can improve your diet simply by adding more vegetables and eating a bit less processed food. Remember, it is not about being perfect, but about nourishing our bodies and finding a balance that works for us.

Here is the soup recipe:
Spicy Brussels Sprout Soup
500 gr brussels sprouts (or more)
1 sweet potato
1 bunch of kale or spinach
1 bell pepper
1 can coconut milk
4 cups vegetable broth
1 tsp turmeric
3-5 small spicy red peppers
3 tbs red curry paste
1 onion
3-5 garlic cloves
1 block tofu or chickpeas
Cut onion, mince garlic and sauté in a bit of water. Cut bell pepper into stripes, cut sweet potato into cubes, cut brussels sprouts into half
Add all vegetables to the pot
Cut tofu into cubes and add to pot
Brown everything for about 10 min
Add vegetable broth, turmeric, cut red peppers, curry paste and coconut milk
Cut tofu into stripes and add
Cook all of it for about 20 min on low, or until potatoes are done
