Hi everyone and welcome back
Moroccan Stew:
1 sweet potato
1 red bell pepper
1 yellow bell pepper
4-5 carrots
The juice of one orange
1 cup red lentils
1 onion
3-4 garlic cloves
2 cups cooked chickpeas
400 ml vegetable broth
1 can diced tomatoes
A handful of chopped nuts of your choice
1 1/2 tsp coriander
1 12/ tsp cumin
1/2 tsp red pepper flakes
1/2 tsp cinnamon
Salt and pepper to taste
Dice onion, mince garlic and saute in a bit of water. In the meantime cut all vegetables into small pieces and add to pot
Saute until lightly browned. Add the rest of the ingredients, mix well and cook on low until potatoes are done (about 25 min)
