Ingredients
For the marinade (flavour + juiciness):
1 kg chicken wings (split into drumettes & flats, patted very dry)
240 ml buttermilk (or milk + 1 tbsp vinegar/lemon, rest 5 min)
1 tbsp hot sauce (optional but great flavour)
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
For the crispy coating:
120 g plain/all-purpose flour (about 1 cup)
2 tbsp cornflour/cornstarch
1 tsp salt
1-2 tsp sugar
2 tsp smoked paprika (or regular)
1 tsp black pepper
2 tsp garlic powder
2 tsp onion powder
½ tsp cayenne pepper (adjust to heat level)
1 tsp baking powder (key to air-fryer crispiness)
For the air fryer:
1–2 tbsp neutral oil (spray or brush)
