You don’t have to have pan drippings from a turkey to make the best gravy. Here’s the recipe for a delicious gravy:
3 tbsp unsalted butter
1/3 cup minced shallot
2 tbsp minced celery
1 clove garlic, minced
1 tbsp minced herbs (sage and thyme work well at Thanksgiving)
1/4 cup all-purpose flour
2-3 cups turkey/chicken/vegetable stock (add more or less depending on the thickness of gravy you prefer. If using drippings from a turkey, add these in first)
kosher salt
black pepper
1-2 tsp cognac (optional)
