My Take on a Dim Sum classic - Siu Mai 自製燒賣
Siu Mais are a classic Cantonese dim sum. These steamed dumplings are made with the classic filling of succulent pork and sweet prawns wrapped in wonton wrappers. A must for whenever you’re having dim sum (yum cha). It's so easy and quick to make at home - few skills are required. Some recipes call for extra lard but if your meat has the right amount of fat content it is not necessary. Happy and healthy eating!

Recipe makes about 20 Siu Mais (食譜製作大約20粒燒賣)
Main Ingredients主要材料:
Pork shoulder (猪肩肉) approx. (大約) 300g – at least 20% fat (至少 20% 的脂肪)
Defrosted frozen prawns (已解凍的蝦) 200g
Rehydrated Shiitake mushrooms (浸軟的香菇) 2 large (大)
Wonton wrappers (雲吞皮) 20 pieces (片)
Seasoning 調味料:
Fine sea salt (幼海鹽) 3/4 tsp (茶匙)
White pepper (白胡椒粉) 1/8 tsp (茶匙)
Sugar about ½ tsp (約½茶匙)
Potato starch or cornflour (馬鈴薯澱粉或玉米粉) 1 tsp (茶匙)
Shaoxing wine or other cooking wine (紹興酒或其他料酒) 1 Tbsp (湯匙)
Sesame oil (麻油) 1 tsp (茶匙)
Garnish (裝飾 ) :
Goji berries 1 per siu mai (每個燒賣一粒杞子)
