Authentic apricot kernel dessert soup with egg whites - smooth and fragrant 真材實料的杏仁露 - 細滑清香
Southern apricot kernels are sweet but Northern apricot kernels taste slightly bitter and are also known as ‘Bitter apricot kernels’. Although the Southern ones are larger than the Northern ones, the Northern ones are stronger in flavour but is slightly toxic. However, simply soaking them in water will dissolve this toxin. Therefore, the amount of Northern apricot kernels is usually much smaller. I have also added some American almonds in this recipe to enhance the nutty flavour. This is so easy to make, all you need is a blender and a nut milk bag and you’ll have a light yet nutritious dessert in no time!
