Soft spinach crepes filled with tender chicken, mushrooms, and a rich creamy sauce, finished with melted cheese. A flavorful and comforting savory dish perfect for lunch or dinner.

Ingredients (for 10 pieces)
Spinach – 75 g / 2.6 oz
Eggs – 3
Milk – 250 ml / 1 cup
Sunflower oil – 4 tbsp / 4 tbsp
All-purpose flour – 150 g / 1¼ cups (5.3 oz)
Salt – to taste
Chicken breast – 1 piece / ~200–250 g (7–9 oz)
Mushrooms – 8–10 pieces / ~200 g (7 oz)
Onion – 1 medium
Heavy cream (20%) – 250 ml / 1 cup
Cheese – 50 g / 1.8 oz

Instructions:
Blanch the spinach in boiling water for 20 seconds.
Transfer the spinach to a blender, add eggs, flour, milk, and oil, and blend until smooth.
Heat a skillet and cook thin crepes from the batter.
Finely chop the mushrooms and chicken.
Heat a little oil in a pan and sauté the mushrooms and onion first.
Add the chicken and spices, cook until done, then pour in the cream and simmer until most of the liquid evaporates.
Place the filling onto the crepes and sprinkle with cheese.
Serve and enjoy!
