Crispy rice paper snails filled with ham, eggs, cheese, and spinach. A delicious, unusual, and high-protein breakfast that’s easy to make and perfect for a healthy start to your day.
Ingredients — for 3 servings
Rice paper — 9 sheets
Ham — 150–200 g | 5–7 oz
Eggs — 3 pcs | 3 large
Cheese — 80 g | 2.8 oz
Spinach — 30–60 g | 1–2 cups (to taste)
Sesame seeds (for garnish) — 1–2 tsp | 1–2 tsp
Spices — to taste
🧑🍳 Cooking Instructions
Beat 2 eggs until smooth, add spices, and cook a scramble in a pan.
Thinly slice the ham.
Grate the cheese.
Rinse the spinach.
Crack 1 egg into a bowl and whisk until smooth.
Pour water into a large plate.
Dip each rice paper sheet into the water for 1–2 seconds, then dip it into the beaten egg.
Overlap 3 sheets of rice paper on a baking tray lined with parchment paper.
Layer the ham, then the scrambled eggs, sprinkle with cheese, and add spinach on top.
Roll everything into a tight log, then twist it into a snail shape.
Bake at 350°F / 180°C for 15–20 minutes, until golden and crispy.
Sprinkle with sesame seeds and garnish with fresh vegetables.
