You can use a non stick pan but well seasoned cast iron or carbon steel pans work just as well. The recipe is for 12 crepes as you may ruin a few if tossing, and you will love them for dessert or breakfast with jam.  You could also put half the chicken quantity and use the 12 crepes.  Have fun either way.
Make them the day before then simply bake and serve.
