Today we’re baking classic homemade almond biscotti—crunchy, lightly sweet, and perfect for dipping in coffee or tea. This easy recipe uses simple pantry ingredients and has a lovely almond flavor with a hint of lemon zest.
Almond Biscotti Recipe
Ingredients:
• 2 eggs
• 1 cup sugar
• 2 cups all-purpose flour
• 1 cup almonds
• 1 tbsp almond extract
• 1/2 tsp vanilla extract
• Zest of 1 lemon
• 1 tsp baking powder
• 1/2 tsp salt
Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk together the eggs and sugar until light and well combined.
Add almond extract, vanilla extract, and lemon zest. Mix well.
In a separate bowl, combine flour, baking powder, and salt.
Gradually add dry ingredients to the wet mixture until a dough forms.
Fold in the almonds.
Shape the dough into a log and place on the prepared baking sheet.
Bake for 25–30 minutes, until lightly golden.
Remove from oven and let cool for about 10 minutes.
Slice the log into biscotti pieces.
Place slices cut-side down on the baking sheet and bake again for 10–15 minutes, flipping halfway, until crisp.
Let cool completely before serving.
