Making burritos is an easy way to take Tex-Mex flavors and get creative. Plus, you can take the recipes and techniques in this video and change up the flavors or fillings. Here are the recipes:
Loaded Burritos
Rice:
1 ½ cup brown or white rice
1 tbsp olive or avocado oil
1 cup salsa
1 ½ cup beef or chicken stock
1 tbsp paprika
1 tsp chili powder
½ tsp cumin
Black Beans:
1 can black beans including liquid
¼ can with water
1 tsp salt
½ tsp pepper
Beef Filling:
1 lb ground beef
3 garlic cloves, minced
1 small onion, diced
1 tbsp chili powder
1 tsp cumin
½ tsp smoked paprika
¼ tsp coriander
¼ tsp salt
1/8 tsp pepper
¼ cup water
4 burrito sized tortillas
¼ cup cheddar cheese for each burrito
Process:
For the rice: heat the oil and toast the rice. Stir continually to avoid burning. Toast for about 5 minutes.
Add the seasonings and stir. Cook 30 sec to 1 minute. Carefully add in the stock and the salsa. Stir, lower heat, cover and simmer 20 minutes or until the rice is done. Remove from the heat.
For the beans: heat the black beans over medium heat until they start to simmer. Using a masher, smash the beans. Continue simmering until they thicken. Add in the salt and pepper. Remove from the heat when the desired thickness is reached.
For the beef: Brown the beef over med-high heat. After a few minutes, add in the garlic and onion. When the meat is browned, remove the excess fat.
Stir in the seasonings and the ¼ cup of water. Bring to a simmer then remove from the heat.
Assembly: Spread some of the black beans across the lower third of the burrito. Spoon some of the beef and rice. Top with the cheese. Fold bottom part of the burrito over the filling. Fold in the sides, then continue rolling up the burrito. Alternatively, you can start with the sides and then roll it up.
Speaking of alternatives, you can speed this meal up by using canned refired beans and boxed Spanish or Mexican rice. Switch out the beef for a leaner meat, if desired. Serve with guacamole, salsa, chopped lettuce, diced tomatoes, hot sauce, and or sour cream.
