Glazed Carrots
6-8 whole carrots, peeled
1-2 tbsp unsalted butter
water
salt and pepper
Process
Cut the carrots using a roll cut: Start at a longer angle and cut the carrot.
Between each cut, roll the carrot ¼ turn. As the carrot gets thicker, reduce the angle of the blade. This makes each piece about the same thickness.
Place the carrots in a large enough skillet with sides. Pour water over just enough to cover the carrots. Place the butter in the middle.
Bring to a slow, rolling boil. Let the carrots cook until all the water is gone. 20 or so minutes.
Add a little salt and pepper and carefully move the carrots around the pan to coat in the butter. Serve immediately.
