Snickerdoodle Coffee Dippers
2 ¾ cup King Arthur 1-1 flour
1 tbsp baking soda
1 tsp baking soda
½ tsp salt
1 cup unsalted butter, room temp
1 ½ cup coconut sugar
2 eggs
1 tsp vanilla
½ cup sugar
1 tbsp cinnamon
Process
Preheat oven to 350F/175C.
Mix the flour, baking powder, baking soda, and salt in a bowl.
Crack the eggs in a small bowl and mix with a fork.
In a larger bowl, or better yet, a stand mixer, mix the butter and coconut sugar together. Next, add the eggs followed by the vanilla.
Once well mixed, add in the flour. Combine until a dough forms.
In another small bowl, combine the sugar and cinnamon.
Portion out the dough using a small ice cream scoop or a teaspoon. Shape into a ball and roll in the cinnamon/sugar mix. Repeat until the cookie dough is used up.
Place evenly on one or two baking sheets. Use a teaspoon to slightly flatten out the cookies.
Bake 8-10 minutes.
These cookies are on the drier side, which is why they are best enjoyed dipped with your coffee or tea.
