Correction to the recipe; curd cube size should be 1 cm, not 2 cm as stated.
São Jorge Cheese (Portuguese: Queijo São Jorge) is a semi-hard to hard cheese, produced on the island of São Jorge, in the Portuguese archipelago of the Azores. Normally made with raw cow's from the island, it is cultured using the previous day's whey. This homemade variation is similar albeit much smaller than the normal 8-12 kg wheels made on the island.
