KOFTA PALAK PANEER HANDI

Ingredients

Beef 400 gm
Ginger garlic paste 1 tbsp
Bread 2 slices soaked in milk
Cream 1 tbsp
Desiccated coconut 2 tbsp
Chili powder ½ tsp
Allspice ½ tsp
Salt ½ tsp
Kofta masala 2 tbsp
Roasted cumin grounded ½ tsp
Chat masala ¼ tsp
Onion 1 sliced
Green chilies 2 chopped
Coriander leaves 2 tbsp

METHOD

Chopperise all the ingredients together, shape into koftas and deep fry.

Ingredients for Karahi

Spinach ½ kg chopped
Onion chopped 2
10 cloves of garlic
Green chilies 4
Baking soda pinch
Salt ¼ tsp
Tomatoes 2 blended
Clarified butter ¼ cup
Cottage cheese 200 gm cut into cubes
Chopped garlic 2 tbsp
Button red chilies 4
Cumin seeds ½ tsp
Above prepared spinach paste
Chopped green chilies 3
Crushed red pepper 1 tsp
Black pepper ½ tsp
Sugar 1 tsp
Salt 1 tsp
Cream ¼ cup
Cream cheese 1 tbsp

METHOD

Boil all this for 10 mins, then grind well.

Ingredients for Tadka

Butter 2 ounces
Chopped garlic 1 tsp
Kasuri fenugreek 1 tsp

METHOD

Make koftas and deep fry, make spinach paste and keep aside. Fry cottage cheese cubes. In the same wok, heat ghee, add the next ingredients, add the spinach paste, fry till ghee comes on top, add in the remaining ingredients, finally add cream, and give tadka on top.



ARABIC STYLE THREE MILK CAKE

Ingredients for Rabri

Evaporated milk 1 can
Condensed milk 1 can
Milk 2 ½ cups
Tetra pack cream ½ cup
Milk powder 2 tbsp
Butter 2 tbsp
Rabri ½ cup
Khoya ½ cup
Cardamom powder 1 tsp
Saffron ¼ tsp
Bread slices as required

Ingredients for Drizzle

Cream for drizzle as required
Desiccated coconut as required
Crushed nuts as required

Ingredients for topping

Whipped cream with icing sugar and cardamom powder
Crushed pistachios and almonds for decoration

METHOD

Cook together all the ingredients for rabri milk, till it reduces a little, arrange 2 layers on bread in the dish,then sprinkle items of filling over it, cover with another layer of bread, now soak the bread with all the milk mixture, beat cream with icing sugar and cardamom powder, pipe on top, decorate with pistachio and almonds, serve chilled.
