SHAHI DAAL GOSHT
Ingredients
Gram lentil 1 cup
Yellow lentils ½ cup
Whole green moong ½ cup
Turmeric ½ tsp
Chili powder ½ tsp
Salt 1 tsp
Clarified butter 1 tbsp
Pressure cooks all the above till daals tender
Ingredients for Shahi Garam Masala
Cumin seeds 1 tsp
Coriander seeds 1 ½ tsp
Fennel seeds 1 tsp
Black pepper corn 1 tsp
Green cardamom 4
Black cardamom 2
Nutmeg ½
Mace 1 flower
Cinnamon 1 inch stick
Saffron ¼ tsp
Grind all the above together very finely
For Mutton Marination
Mutton ½ kg
Ginger garlic 2 tbsp
Green chili pastes 1 tbsp
Onion 1 boiled and pureed
Salt 1 tsp
Chili powder 2 tsp
Turmeric ½ tsp
Coriander powder 1 tsp
Roasted cumin 1 tsp
Tomato puree ½ cup
Yogurt ½ cup
To Cook
Oil ½ cup
Bay leaf 1
Brown onion ½ cup
Marinated mutton
Water to pressure cook mutton
Prepared lentil
Milk 1 cup
Cream ½ cup
Prepared shahi masala
Coriander and mint leaves chopped 2 tbsp each
Green chilies 4 large cut into ½ inch slices
Ingredients for Tadka
Clarified butter ½ cup
Onion 1 cup chopped
Garlic 1 tbsp chopped
Chili powder 1 tsp
Button red chilies 4
Shahia masala 1 tsp
METHOD
Pressure cook soaked daal with given ingredients when tender, add milk to daal and mash using a hand masher, keep 50% daal solid and mash the rest, apply marination ingredients on mutton for few hours, add bay leaf, brown onion, marinated mutton, fry well till oil separates, now add 2 cups water and pressure cook the mutton, add daal mixture, add cream, mint and coriander, shahi garam masala, cook for 5 mins, lastly give tadka and serve.
TOMATO CAPSICUM SUBZI
Ingredients
Large tomatoes chopped 4
Capsicum 1 cut into small cubes
Large green chilies 3 cut into thick slices
Vinegar ¼ cup
Salt ½ tsp
Turmeric ½ tsp
Chili powder 1 tsp
Cumin roasted 1 tsp
Crushed red pepper ½ tsp
Salt 1 tsp
Ingredients for Tempering
Oil ¼ cup
Curry leaves 20
Mustard seeds 1 tsp
Chopped garlic 1 tsp
Cumin seeds 1 tsp
Chili flakes ½ tsp
METHOD
Put tomatoes, capsicum, green chilies in a sauce pan with 1 little water, cover and cook till tender, add vinegar and all the spices, use a masher to mash the vegetables, add tadka to the chutney, cook for 5 mins and serve
