BHINDI KI SABJI RECIPE
Yeh ek simple, swaadist, aur Home-style Bhindi Fry hai. Isme lehsun (garlic) aur pyaaz (onion) ka tadka ise ek zabardast aroma aur crunch deta hai. Yeh dal-chawal ya garam paratha ke saath best lagti hai. Kam masalon ke saath, yeh bhindi ka asli swaad ubhaar kar laati hai.
Ingredients
Bhindi (Ladyfinger): 250-500 grams (dhokar dried aur round shapes mein kati hui)
Onion (Pyaaz): 2 bade (lambe kate hue / sliced)
Hari Mirch (Green Chillies): 3-4
Lehsun (Garlic): 6-8 cloves
Namak (Salt): Swaad anusar (as per taste)
Oil 2-3 bade chammach
HALDI: Ek chutki Haldi (Turmeric) rang ke liye.
Quick Tip: Bhindi ko dhone ke baad achhe se dry kar lein, isse sabji bilkul bhi chipchipi (sticky) nahi banegi!
Bhindi Banane ka Tarika (Step-by-Step)
Preparation:
Bhindi ko achhe se dhokar ek saaf kapde se ponchh (wipe) lein. Phir ise round pieces ya apni pasand ke size mein kaat lein. Saath hi onion, hari mirch, aur lehsun ko bhi Pees le ya bareek kaat kar side mein rakh dein.
Onions Fry Karna:
Ab isme kate hue onions daalein. Inhe tab tak pakaein jab tak pyaaz halke gulabi (translucent) ya light golden na ho jayein.
ab usme peesa huwa ya bareek kata hua lehsun aur hari mirch daal kar 30 seconds ke liye sauté karein jab tak lehsun ki khushboo na aane lage.
Bhindi Cook Karna:
Ab kadhai mein kati hui bhindi daalein aur achhe se mix karein. Ise medium flame par 5-7 minutes ke liye bina dhake (open pan) pakaein. Bina dhake pakane se bhindi ka chipchipapan (sliminess) jaldi khatam ho jata hai.
Namak aur Masale:
Jab bhindi halki soft hone lage, tab isme namak (salt) aur thodi si haldi daal dein. Sab kuch achhe se milayein aur low flame par 5-10 minutes aur pakne dein jab tak bhindi puri tarah gal na jaye.
Serving:
Jab bhindi ekdum crispy aur pak jaye, tab gas band kar dein. Ise garam-garam roti ya parathe ke saath serve karein.
Secret Tip: Agar aapko bhindi zyada crispy chahiye, toh pakne ke baad aakhiri 2 minute flame high karke ise lagatar chalate hue bhunein.
