Protein Aronia Muffins
(Makes 9 muffins)
Ingredients:
• 2 ripe bananas
• 2 Medjool dates, pitted and finely chopped
• 2 tablespoons ground flaxseed
• 6 tablespoons hot water
• Vanilla extract, to taste
• ½ teaspoon ground cinnamon
• 1 cup peanut butter (≈ 250 g)
• 1 cup aronia berries (fresh or frozen)
• 40 g unsweetened pea protein powder
Instructions:
1. In a small bowl, prepare the vegan egg by mixing the ground flaxseed with hot water. Let it sit for 5 minutes until it thickens.
2. Mash the ripe bananas in a large bowl.
3. Add the chopped Medjool dates, vanilla extract, cinnamon, peanut butter, pea protein powder, and the flaxseed mixture. Mix well until smooth and well combined.
4. Gently fold in the aronia berries, being careful not to crush them.
5. Transfer the batter evenly into silicone muffin molds.
6. Bake at 350°F (180°C) for approximately 25 minutes, or until set.
7. Let cool slightly before removing from the molds.
