Arabic Tabbouleh with Quinoa (Vegan & Gluten-Free)
Ingredients
• 1 large bunch fresh parsley, finely chopped (including stems)
• a few fresh mint leaves, finely chopped
• 2–3 tablespoons extra virgin olive oil
• juice of ½ lemon (or more, to taste)
• salt, to taste
• black pepper, to taste
• a pinch of allspice
• 1 small to medium onion, finely chopped
• 2 tomatoes, finely chopped and drained
• ¼ cup raw quinoa, cooked in water and cooled
Instructions
1. Wash the parsley thoroughly and finely chop it, including the stems.
2. Finely chop the tomatoes and place them in a sieve to drain excess liquid.
3. Finely chop the onion and mint leaves.
4. Cook the quinoa in water according to your usual method, then let it cool completely.
5. In a large bowl, combine the parsley, tomatoes, onion, mint, and cooked quinoa.
6. Add olive oil, lemon juice, salt, black pepper, and a pinch of allspice.
7. Mix gently until all ingredients are well combined.
8. Taste and adjust seasoning if needed. Serve fresh.
This salad can be enjoyed on its own or served alongside hummus, falafel, or grilled vegetables.
