Beet Greens with Walnuts - Charkhlis Potlis Pkhali (Red Pkhali)
Beet greens with walnuts is a delicious and healthy Georgian pkhali appetizer dish. As have been well established in Georgian culinary traditions, hearty and healthy vegetables are substantive part of the diet. This time-tested recipe is simple to make and delicious. Deep maroon port wine color of stems and the fresh green color of the leaves makes a delightful contrast. Adding walnuts turns this pkhali into a dark earth tone creamy color spread. Georgians traditionally garnish the dish with pomegranate seeds, which does not produce much color contrast with the dish but it tastes good. Sprinkling with finely chopped cilantro will provide a nice contrast in garnish to this dish. The beet green pkhali is served as an appetizer or on its own for lunch or dinner with any kind of toasted or crispy bread, crackers or chips. It can be refrigerated for 2 to 3 days. Red Swiss chard is a substitute.
Ingredients for Beet Greens with Walnuts - Charkhlis Potlis Pkhali

Serves 3 to 4
2 pounds beet greens or red swiss chard
1 cup walnuts
Coarse salt
3 or 4 garlic cloves, peeled
1/2 teaspoon ground coriander
1 teaspoon Khmeli-Suneli spice blend
¼ teaspoon or more hot red ground pepper or cayenne
1 cup chopped cilantro
1/2 cup parsley
1/3 cup chopped onion
2 tablespoons distilled white vinegar
½ cup pomegranate seeds or 2 to 3 tablespoons chopped cilantro
