Breakfast Waffles
Per: 300g waffles, 2 tsp maple syrup, 16g pb2, 85g Rivera oat based yogurt and mixed berries:
Calories: 562, Protein: 30g, Carbs: 85g, Fat: 11g
Ingredients:
2 cups GF thick rolled oats
349g (1 pack) extra firm silken tofu
1 cup unsweetned soy milk
1 tsp baking powder
1 tbsp vanilla extract
1 tbsp maple syrup
Blend everything in a high speed blender and cook waffles on a non-stick griddle one by one. If waffles batters thickens while cooking others then add add 1/4- 1/3 cups of water or milk to loosen the batter. This batter will have sticky consistency. This recipe makes 5-6 waffles.
Lunch:
per 300g Tofu Egg scramble, 2 stone mill whole grain bread and half a English cucumber
Calories: 465, Protein: 31g, Carbs: 54g, Fat: 16g
