Great British Bake Off / Baking Show Technical Challenge - ECLAIRS!!
An easy choux pastry that is quick to make, so you can throw it together any time! These freeze beautifully when not filled, so make whatever shape you like and store them for a quick and easy dessert!
The creme patisierre is smooth and rich and incredibly delicious. It can be used it a variety of recipes, and it is also really lovely on its own as a pudding!
I hope you love this recipe as much as I do! When I was a little girl, I used to make choux pastry with my grandmother, and every time I make them now, the smell brings me right back to summers spent with her.

Choux Pastry
170g butter
450mL water
200g flour
5 eggs
Creme Patisierre
675mL whole milk
135g caster sugar
40g cornflour
2 eggs + 2 egg yolks
2 tsp vanilla
Quick Pour Fondant
375g icing sugar
75mL water (I accidentally used too much! That’s why the raspberry topping looks a bit runny. Make sure to add the water slowly to get the right consistency)
2 tbsp golden syrup
1 tsp flavouring (optional)
Caramel
200g sugar
1/2 cup heavy cream
6 tbsp (90g) butter
1 tsp salt
