Semlor (singular: semla) are Sweden’s most iconic winter buns! You can find metric and imperial measurements below! These soft, cardamom-scented buns are filled with sweet almond paste and a generous cloud of whipped cream, finished with a snowy dusting of powdered sugar. Traditionally, they're enjoyed from New Years through to Easter - and especially on Fat Tuesday/Shrove Tuesday. These selmor buns are rich, cozy, light and delicious!

🥑🍓🥦🍉🍋 INGREDIENTS 🥔🥚🍫🧁🎂🍰
Tangzhong
2 1/2 tbsp. (20 grams) strong white bread flour
1/4 cup (60 grams) whole milk
1/4 cup (60 grams) water
Semlor Buns
10 - 15 cardamom pods, ground (or use 1 tsp. dried cardamom)
4 cups + 2 tbsp. (500 grams) strong white bread flour
1/4 cup (50 grams) caster or superfine sugar
1/4 tsp. (2 grams) salt
2 1/2 tsp. (8 grams) instant dry yeast
tangzhong, as above
1 cup (235 ml) whole milk
1 large egg
3 1/2 tbsp. (50 grams) butter, room temperature, cubed
1 egg yolk, for the egg wash
Almond Paste
2 cups (200 grams) skinned almonds
3/4 cups + 2 tbsp. (100 grams) icing or powdered sugar
1/2 tsp. (2 grams) almond extract
1 egg white
1 tsp. (15 ml) water
Filling
the insides of your semlor buns
7 oz. (1 cup, 200 grams) almond paste
1 tbsp. (10 grams) icing or powdered sugar
2/3 cup (150 ml) whole milk
12 tsp. (80 grams) raspberry jam (not traditional, but recommended!)
Whipped Cream
just under 2 cups (450 ml) double or heavy cream
1 tsp. (4 grams) vanilla extract
1 tbsp. (10 grams) icing or powdered sugar
1/2 tsp. (2 grams) cream or tartar
icing or powdered sugar, to dust the semlor buns
