Creamy Garlic Parmesan Chicken with Rice
Ingredients (2–3 servings)
• 2 chicken breasts
• 1 medium onion, finely chopped
• 3 garlic cloves, minced
• 1 chicken stock cube
• 200 ml (about ¾ cup) heavy cream
• 50 g (½ cup) grated Parmesan cheese
• 1 tbsp olive oil or butter
• ½ cup water (to dissolve stock cube)
• Salt and freshly ground black pepper (to taste)
• Cooked rice (for serving)

Instructions
1. Prepare the chicken
• Slice the chicken breasts into thin cutlets or bite-sized pieces.
• Season lightly with salt and pepper.
2. Sauté aromatics
• Heat the oil/butter in a large skillet over medium heat.
• Add the chopped onion. Cook until softened and slightly golden.
• Add minced garlic and cook for another 1–2 minutes, stirring so it doesn’t burn.
• Add chicken pieces and sear until golden on both sides
•Deglaze: Add a bit of water to release the flavors.
3. Make the sauce
• Dissolve the chicken stock cube into the pan.
• Stir and let simmer for 2–3 minutes to reduce slightly.
• Lower the heat, add the cream, and stir well.
• Add Parmesan cheese and mix until melted and the sauce thickens.
4. Combine chicken & sauce
• Return the chicken to the pan.
• Simmer for another 3–4 minutes, until chicken is fully cooked and coated in the creamy sauce.
• Taste and adjust seasoning with salt and black pepper.
5. Serve
• Spoon the creamy garlic Parmesan chicken over hot cooked rice.
• Garnish with extra Parmesan or fresh parsley if you like.
