A rich, cheesy layered pastry from Turkey made with tender boiled dough sheets and a creamy cheese filling — crispy on top, soft and custardy inside!
🛒 Ingredients (Serves 6–8)
For the Dough:
4 cups all-purpose flour
4 large eggs
1 tsp salt
1 cup warm water (as needed)
For the Filling:
2 cups crumbled feta cheese (or Turkish white cheese)
1 cup shredded mozzarella (optional for extra stretch)
½ cup chopped fresh parsley
For Assembly:
1 cup unsalted butter, melted
4–5 cups water (for boiling)
1 tbsp salt (for boiling water)

1️⃣ Make the Dough
In a large bowl, mix flour and salt. Add eggs and gradually add water, kneading until you get a smooth, firm dough. Cover and let rest for 20–30 minutes.
2️⃣ Prepare the Filling
Combine feta, mozzarella, and chopped parsley. Set aside.
3️⃣ Roll & Boil the Layers
Divide dough into 6–8 balls. Roll each one very thin (almost translucent).
Bring a large pot of salted water to a boil.
Boil each sheet for about 30 seconds, then transfer immediately into cold water.
Drain and gently pat dry.
(Tip: The first and last layers are usually not boiled.)
4️⃣ Assemble
Grease a baking dish with butter.
Place the first raw dough sheet at the bottom. Brush with melted butter.
Layer boiled sheets one by one, brushing each with butter.
Add cheese filling in the middle layer.
Continue layering, finishing with a raw sheet on top. Brush generously with butter.
5️⃣ Bake
Bake at 375°F (190°C) for 40–45 minutes, until golden brown and crisp on top.
🔥 Serving Tips
Let rest 10–15 minutes before slicing.
Serve warm with Turkish tea.
Add sautéed spinach to the filling for a variation.
