🥘 The Hillbilly Savory Sourdough Save (Strata)
The Bread: 1 loaf overproofed sourdough (cubed)
The Goods: 1 cup diced leftover ham, 1.5 cups shredded cheese
The Custard: 6 large eggs, 2.5 cups milk, 1 tsp Dijon mustard, salt/pepper/thyme.
Instructions:
Layer bread, ham, and cheese in a greased 9x13 dish.
Whisk custard ingredients and pour over the bread.
The Secret: Let it soak for at least 30-60 mins (or overnight!) so the bread drinks up the custard.
Bake at 175°C (350°F) for 50-60 mins until golden and set.
❄️ Freeze, Defrost & Reheat Instructions
To Freeze: Let the baked pudding cool completely. Slice into individual portions and wrap tightly in plastic wrap and foil. (Lasts up to 3 months!)
To Defrost: For best results, thaw in the refrigerator overnight.
To Reheat: * Oven: 10-15 mins at 175°C (350°F) covered with foil to keep it moist.
Air Fryer: 3-5 mins at 180°C for a "Hillbilly Hack" that makes the edges crispy again!
Oven Reheat Instructions (Best for Large Portions)
If you're reheating a large section or the whole pan, follow these steps to keep that "fresh-baked" texture:
Preheat: Set your oven to 175°C (350°F).
The "Steam Hack": Place your bread pudding in an oven-safe dish. Add a tiny splash of milk or water to the bottom of the dish—this creates steam so the sourdough doesn't dry out!
Cover: Cover the dish tightly with foil. This traps the moisture and prevents the cheese from getting too hard.
Bake: Heat for 15–20 minutes (if thawed) or 35–40 minutes (if heating straight from frozen).
Crisp it up: Remove the foil for the last 5 minutes of heating to get that top crust nice and "Hillbilly Crispy" again!
