I'm sharing the secret to a richer, more resilient noodle by using our fresh duck eggs—a simple swap that elevates the classic burnt butter finish.

​The Duck Egg Advantage: Duck eggs have less water than chicken eggs. If the dough feels shaggy, add 1 tsp of water at a time until it comes together for a richer, sturdier noodle.

​The "Windowpane" Test: After a 90-minute rest, your dough should be translucent. You should almost see the grain of your tabletop through it!

​Don't Skimp on Flour: Amish noodles are traditionally "dusty." This extra flour helps thicken the cooking liquid into a light, silky sauce.

​The "Burnt" in Burnt Butter: Don't be afraid of the dark! Aim for a deep amber (the color of a copper penny) for that signature nutty flavor.


​How to Store Your Homemade Noodles

​1. The Air-Dried Method (Pantry Stable)

​The Process: Toss in flour and spread in a single layer on a drying rack or clean tablecloth.

​The Time: Sit at room temperature for 24–48 hours until they "snap" cleanly.

​Storage: Keep in an airtight glass jar in a cool, dark pantry for up to 6 months.

​Cooking: Boil for 7–10 minutes.


​2. The Freezer Method (Fresh Flavor)

​The Process: Air-dry for 30–60 minutes until no longer tacky.

​The "Flash Freeze": Lay flat on a parchment-lined sheet in the freezer for 1 hour.

​Storage: Transfer to a freezer bag (remove air). Peak quality lasts 3–4 months.

​Cooking: Drop frozen noodles directly into boiling water for 3–5 minutes.
