*This recipe makes about 25 pieces of pork jerky (10 x 10cm)
900g Ground pork 市售猪肉碎 +
200g Mince pork lard (搅碎)猪肥油
*或可用550g前腿肉 + 550g猪肥油搅打成肉碎
Or you can use 550g of pork front leg meat + 550g lard - mince and mix until combined
200g Granulated sugar细砂糖
40g Honey 蜜糖
2tbsp Shao Xing wine 绍兴酒 2汤匙
1tbsp Red yeast rice powder 红曲米粉 1汤匙
2tbsp Light soy sauce 生抽 2汤匙
1tbsp Oyster sauce 蚝油 1汤匙
1tbsp Fish sauce 鱼露 1汤匙
1/2tsp Salt 海盐 1/2茶匙
1/2tsp Pepper 胡椒粉 1/2茶匙
2tsp Fried garlic 炸香后的蒜末 2茶匙
1.Mix all the ingredients for about 3 minutes, until it turns gooey
Refrigerate for at least 4 hours or overnight
全部材料搅打至起胶
放入冰箱冷藏最少4个小时或隔夜
2.The next day, place about 200g of meat mixture on the parchment paper
隔天,把1份大概200g的猪肉碎倒在油纸上
3.Place a plastic bag on top of the meat
在肉碎上面放一张塑料袋 - 用手掌压平
4.Using a rolling pin, roll over meat
The meat layer should be about 2-2.5mm thick
再用杆面棒把肉碎杆成厚度约2-2.5mm的薄片
5.Transfer it into the preheated oven - bake at 110℃ for 13-15 minutes until it is set
放入已预热烤炉,以110℃-烤13-15分钟至定型
6.Remove the half-cooked pork jerky out from the oven
When it is cool enough to handle, cut each sheet of meat into desired size
出炉带稍微冷却后撕开油纸 - 把烤至半熟的肉干剪成自己喜欢的大小
7.Place the pork jerky on the baking tray
Bake at 180°C-for 2-3 minutes on each side, until the edges are slightly burned
再一片一片的摆上烤盘 - 进烤炉 - 双面各分别180℃ - 烤2-3分钟,至边缘微焦即可
8.The pork jerky can be stored in the freezer for up to 3 months
Just defrost then reheat in the preheated oven at 160℃-for 3-5 minutes before serving
做多了的肉干可冷冻保存3个月
要吃的时候解冻 - 放入已预热烤炉以160℃ - 加热3-5分钟即可
