Parmesan Roasted Zucchini - the Perfect Summer Side Dish (Healthy and Nutritious)
4-5 medium zucchini
2 tablespoons olive oil (divided)
½ teaspoon salt
½ teaspoon cracked black pepper
2 tablespoons panko bread crumbs
2-3 tablespoons finely grated parmesan cheese
Preheat the oven to 450 degrees. Thoroughly wash zucchini, dry, and trim ends off. Slice zucchini lengthwise and each section in half lengthwise again. You will end up with four spears from each zucchini. *If the zucchini is large, slice each half into three sections.Set aside.
Using a sheet pan or large casserole dish, drizzle with 1 tablespoon olive oil, salt, and pepper. Toss to coat all sides of the zucchini. Arrange the zucchini in two rows with their skin side down being sure the zucchini are touching each other and no gaps between each zucchini spear. Sprinkle the tops of zucchini evenly with panko bread crumbs and then top with parmesan and drizzle remaining olive oil.
Bake for 12-15 minutes (depending on your oven) until the zucchini is soft (not soggy), and the tops are golden brown. Serve immediately this perfect summer side dish. Enjoy!
