Ingredients
• 1 liter full cream milk
• 3–4 tbsp sugar (as per taste)
• 2 cardamom
• 10–12 chopped almonds & cashews
• 15-20 chopped pistachio
• Few saffron strands (optional)
Method
1. Heat milk in a heavy-bottom pan and bring it to a boil.
2. Simmer on low flame and stir continuously to avoid sticking.
3. Cook till milk reduces to half and becomes thick.
4. Add sugar and mix well.
5. Cook for 5 more minutes.
6. Add cardamom powder, saffron, and dry fruits.
7. Mix gently and turn off the flame.
8. Cool and refrigerate for 1 hour.
9. Serve chilled Basundi.
Ingredients for rasgulla
• 1/2 litre full cream milk
• 2 lemon juice or vinegar
• 1 small cup sugar
• 4 small cups water
• 1 tsp cardamom (optional)
Method
1. Boil milk in a pan and turn off the flame.
2. Add lemon juice slowly and stir till milk curdles.
3. Strain through a muslin cloth and wash chenna with cold water.
4. Hang for 30 minutes to remove excess water.
5. Knead chenna for 8–10 minutes till smooth and soft.
6. Make small smooth balls.
7. Boil sugar and water in a pan to make sugar syrup.
8. Add chenna balls and cook covered for 12–15 minutes.
9. Add rose water or cardamom powder.
10. Cool and serve chilled with chilled basundi on top.
