Ingredients
• 1 cup fresh methi leaves (finely chopped)
• 1 cup fresh spinach leaves (finely chopped)
• 1/2cup fresh coriander leaves (finely chopped)
• 1 cup besan (gram flour)
• 1/2 cup wheat flour
• 1 cup makki atta/ bajra flour/ Jawar flour
• 1 tsp ginger,garlic -green chilli paste
• 1/2 tsp turmeric powder
• 1 tsp coriander powder
• 1 tsp Kashmiri chilli powder
• 1/2 tsp asafoetida
• 1 tsp fennel seeds
• 1 tsp sesame seeds
• 1 tsp Ajwain
• 1 tsp cumin seeds
• 1 tsp red chilli powder (adjust to taste)
• 1 tsp coriander powder
• 1 tsp sugar or jaggery powder(optional)
• Salt to taste
• 1 tsp lemon juice
• 2 tsp oil (for softness)
• Water (as needed to make dough)
For Tempering (Tadka) – Optional
• 2 tbsp oil
• 1 tsp cumin seeds
• 2 tsp sesame seeds
• A pinch of asafoetida (hing)
• 6–8 curry leaves
Method
1. Prepare the dough
In a bowl, add methi leaves, add spinach leaves, add coriander leaves, besan, wheat flour, makki atta, all spices, sugar, salt, lemon juice, and oil.
Mix well and add little water to make a soft, non-sticky dough.
2. Shape the muthiya
Divide the dough into portions and shape into small cylindrical rolls using your fist (muthi shape).
3. Steam
Grease a steamer plate and place the rolls.
Steam for 15–20 minutes on medium heat until cooked.
Check by inserting a knife—it should come out clean.
4. Cool & slice
Let them cool slightly, then cut into bite-sized pieces.
5. Tempering (optional but tasty)
Heat oil in a pan. Add mustard seeds, cumin seeds, sesame seeds, hing, curry leaves, and green chillies.
Add sliced muthiya, toss gently, and cook for 2–3 minutes until lightly crisp.
