Hi everyone,
This Indonesian Barbecued/Baked (you can cook it either way) Chicken tastes great! It goes well with steamed rice, fresh vegetables such as cucumber and cabbage, tomato slices and sambal. I use chicken drumsticks but you can also use a different cut of chicken.
It’s easy to make, too, so let’s give it a try!

INDONESIAN BARBECUED/BAKED CHICKEN (makes 10 drumsticks)
Ingredients
====================
10 chicken drumsticks
4 candlenuts or macadamia nuts
1 Thai chili padi
1.4 oz (40 g) ginger root
6 cloves of garlic
8 small shallots (55 g)
1 tsp shrimp paste or 2 tsp fish sauce
Pound into a paste
5 tbsp brown sugar
2 tsp sugar
2 tsp salt
¼ tsp white pepper
2 tsp tamarind or vinegar
2 tsp coriander powder
8 lime leaves, torn
4 salam leaves (Indian bay leaves)
1 cup (240 ml) water
3 tbsp sweet soya sauce
1 tbsp oil
Preparation
===============
⇒ Pound candlenuts or macadamia nuts, chili, ginger, garlic, shallots and shrimp paste into a paste.
⇒ Combine the paste, chicken and all ingredients (except sweet soya sauce and oil) in a pot. Mix well.
⇒ Bring to a boil, stirring occasionally.
⇒ Add sweet soya sauce and mix well.
⇒ Cook until well blended and a small amount of sauce remains.
⇒ Add oil and mix well.
⇒ Place on a baking pan lined with aluminum foil if you want to BAKE in OVEN.
OR you can BARBECUE.
⇒ Coat with sauce from cooking process. Reserve some sauce for basting.
⇒ Baked in oven preheated to 375° F for 30 minutes.
⇒ After 30 minutes, turn over the drumsticks and baste with the remaining sauce. Bake for about 20 more minutes until fully cooked.
⇒ When the drumsticks are fragrant, this is a sign they are done.
⇒ Serve with steamed rice, fresh vegetables such as cucumber and cabbage, tomato slices and sambal.
