This quick and delicious Tomato Shorba transforms leftover cream of tomato soup into a fragrant, comforting Indian-style soup. Infused with green chilies, ginger, kasoori methi, coriander, and a touch of mushroom broth powder for rich umami flavor, it’s a perfect starter or light meal. Easy to prepare and packed with layers of flavor, this shorba is sure to warm you up and satisfy your taste buds
Ingredients:
Leftover tomato soup (cream of tomato) – 1 cup
Water – 2 cups (adjust for desired consistency)
Green chilies – 2 tsp (finely chopped or crushed)
Ginger – 1-inch piece (grated or finely chopped)
Kasoori methi – 1 tsp (crushed)
Fresh coriander leaves with stems – handful (chopped)
Salt – to taste
Bay leaf – 1
Method:
Heat butter in a saucepan. Add bay leaf and sauté for a few seconds.
Add green chilies and ginger. Sauté till fragrant.
Add water and bring to a gentle boil.
Add leftover tomato soup, kasoori methi, and chopped coriander leaves with stems. Mix well.
Simmer for another 5-7 minutes for flavors to blend.
Strain the shorba to remove green chili pieces, ginger bits, and coriander stems (optional).
Serve hot and enjoy
