Ingredients
Maida 225 g
Orange marmalade 80 g
Caster sugar 150 g
Fresh curd 100 ml
Refined oil 90 g
Milk 150 ml (to adjust batter consistency)
Vanilla essence 1 tsp
Baking powder 1½ tsp
Baking soda ½ tsp
Salt 1 pinch
Almond flakes 10-15 g (for topping)
1 Preheat oven to 170°C for 10 minutes
2 Sift together maida baking powder baking soda and salt and set aside
3 In a separate bowl whisk curd and caster sugar until smooth
4 Add oil marmalade and vanilla essence to the wet mixture and mix well
5 Gradually fold the dry ingredients into the wet mixture until combined
6 If the batter is too thick add milk little by little to reach a medium-thick pouring consistency
7 Pour batter into a greased and lined 7 inch tin
8 Sprinkle almond flakes on top and tap the tin twice to remove air bubbles
9 Bake at 170°C for 35-40 minutes
10 Check doneness with a skewer after 35 minutes
11 Let the cake rest for 10 minutes before removing from the tin
