The song was recorded by Jack Endino at Reciprocal Recordings during the "Love Buzz" single sessions, June–September 1988. "Big Cheese" was chosen as a b-side instead of "Blandest" because neither band nor Endino liked the latter. Endino suggested that "Big Cheese" should be on the single, and so it was.

The song wasn't included in the first pressing of "Bleach" in the US; the album had 11 tracks, no "Big Cheese" and "Downer". However, the initial UK 11-track issues had "Big Cheese" on the list instead of "Love Buzz". Later re-issues had all 13 tracks.

"Big Cheese" is an anti-authority song inspired by Kurt's issues with Jonathan Poneman, one of the Sub Pop bosses. "I was expressing all the pressures that I felt from him at the time because he was being so judgmental about what we were recording," Kurt explained.

Unlike the vast majority of Nirvana songs, "Big Cheese" is not credited just to Kurt; Krist is an author too. And he is proud of his contribution. In 2009, he interviewed Chad and said, "I think one of the best songs you and I worked together on was "Big Cheese". Kurt came up with that two-note riff for the verses. You and I took off for that instrumental bridge. I went up high on the neck of the bass, and you did that great double kick!".

Channing added: "That's one of my favorite songs. You know why it really worked for me? My friends and I would play our 45s on 33 rpm. It would sound deeper and heavier at that speed."
