We’re a British family in the UK obsessed with American food—and tonight we’re making White Chicken Chili (aka white chilli) for the very first time. Creamy, cosy, a little spicy, and totally new to us. Does it beat British chilli… or even Texas chili? Watch to the end to find out (it might blow David’s head off 😂).

Ingredients

1 Tbsp oil
1 white onion, diced
2 cloves garlic, minced
14.5 oz (410 g) chicken broth/stock
Spices: cumin, paprika, oregano, coriander, cayenne
Fresh chilies (we couldn’t get canned green chiles in the UK, so we used fresh—and yes, seeds went in 😅)
Cannellini beans (some whole, some blended with ¼ cup broth for thickening)
Sweetcorn
Cream cheese (or try sour cream—tell us which you use!)
Cooked shredded chicken (we used leftovers)
Fresh cilantro (coriander) & lime juice
Toppings: avocado, tortilla chips, shredded cheese

Method (Quick Summary)
Sauté onion in oil ~4 min; add garlic 30 sec.
Add broth + spices + chilies; simmer ~15 min.
Stir in whole cannellini beans + the blended bean paste to thicken.
Add corn, cream cheese (or sour cream), then stir in shredded chicken.
Finish with cilantro and lime. Top with avocado, tortilla chips & cheese. Enjoy!

FAQ:

Is white chicken chili spicy? Ours is a gentle heat (“warm hug” level). Add more chilies or cayenne if you like it hotter.

Beans? We used cannellini—some blended for body.

No canned green chiles in the UK? Use fresh green chilies; de-seed for milder, keep seeds for heat.
Cream cheese or sour cream?
Today: cream cheese. Many use sour cream—comment which you prefer so future viewers see the best option.
Tomato-free? Yep—no tomatoes, unlike British chilli or Cincinnati/“red” chili.
