Crunchy Italian Cantucci (Biscotti) – Easy Almond Biscotti Recipe

Ingredients
• 2 cups all-purpose flour (about 250 g)
• 4 tbsp softened butter (about 50 g)
• ½ cup granulated sugar (about 100 g)
• 2 eggs
• ½ tsp baking powder
• ½ tsp baking soda
• Pinch of salt
• Zest of ¼ lemon
• ¾ cup raw almonds (about 100 g)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream butter and sugar until light and smooth.
Add eggs one at a time and mix well.
Stir in lemon zest, flour, baking powder, baking soda, and salt.
Fold in the whole almonds.
Shape dough into logs on the baking sheet and flatten slightly.
Bake 20–25 minutes until lightly golden.
Cool for 10 minutes, then slice diagonally.
Place slices cut-side down and bake again 8–10 minutes per side until crisp and golden.
Let cool completely and enjoy!
Perfect with coffee, tea, or espresso.
