Welcome back! We are making some high protein veggie pasta today. It's a super simple recipe, and the red lentil pasta adds a huge amount of protein. This is the kind of simple meal that has allowed me to lose over 100 pounds and keep it off. I am still on my journey, and foods like this are still part of my plan. Don't let anyone tell you that you can't have pasta while losing weight!
Sauce Ingredients:
Onion - diced
Mushrooms - diced
1 - 28oz can crushed tomatoes
1 cup TVP
1-2 tsp Better Than Bullion Vegetable base
1 cup water (to rehydrate the TVP)
1tbsp garlic
1tbsp dried basil
1tbsp dried oregano
2tbsp nutritional yeast
1/4 tsp baking soda - to cut the acidity (optional)
Use whatever red lentil or chick pea pasta you prefer. Be careful not to overcook it or it will turn to mush!
