Bean Stew
1 can Chickpeas, 540 ml
1 can of Navy Beans, 540ml
1 can of Tomato Sauce, 398 ml
200 ml of filtered Water
400 ml of Frozen Mixed Veggies
Spices:
Paprika, dry Parsley, Onion Powder, Garlic Powder, Chili Powder, Chili Flakes, Cumin, Sea Salt, Black Pepper.
Method:
1. Add all the rinsed chickpeas & beans to a large pan.
2. Toss in all the seasonings that you want to use and the tomato sauce. Give it a good mix.
3. Next add in the water & Veggies. Place the lid on top of the pan. Cook for about 15 minutes, giving it a stir every so often.
4. Once it’s cooked to your liking, go ahead and serve it on a bed of rice or you can have potatoes alongside it. I sometimes like having it with mashed potatoes as well.
Note:
The stew will stay very fresh and delicious for many days. Just make sure you store it in an air container in your refrigerator. You can also freeze this stew if you want to batch cook.
Irish Soda Bread
Ingredients:
2 cups of unsweetened plant milk
1 teaspoon of apple cider vinegar
4 1/2 cup of whole wheat flour
1 teaspoon of sea salt
1 teaspoon of baking soda
Method:
1. Preheat oven to 400°F
2. Add the 2 cups of plant milk into a small bowl and 1 teaspoon of apple cider vinegar. Give it a mix and allow to sit for 10 to 15 minutes.
3. Add 4 cups of flour to a large bowl and one teaspoon of baking soda. Combine well.
4. Once your milk mixture has been sitting for about 15 minutes you can go ahead and add it to the flour. Combine well.
5. Slowly add your other half a cup of flour as needed. I needed the full half a cup. Depending on your whole wheat flour you might need a little less. Try not over mixing the dough.
6. Next add to a lined cookie tray. I use parchment paper and shape it into a ball. That’s flattened out a bit. Next use a sharp knife and make a cross symbol across the top of the bread.
7. Pop into the oven and bake for 40 to 45 minutes at 400°F. Mine was done at 42 minutes.
